Not sure what you are asking. If you want to treat each IP behind the
firewall as a separate host, go ahead. The firewall will never know
or care if it is really a single piece of hardware.

If it's not doable, how can I configure checkpoint so that users can access
both sites by just resolving both web addresses to just 1 public IP address?

Virtual hosting isn't a big deal if you are just interested in filtering
at the network layer. If you want to look at the application layer, the
HTTP, using HTTP resources, then things become more complicated with
virtual servers.
