I tried to catch some data by capturing the traffic, but its a hard work to do so as a lot of information must be correlated by hand.....

One of the common Exchange problems is that it disobeys the SMTP spec; try wrapping your qmail-smtpd with the fixcrio program to address the problem.

Without patching, using recordio is really your best option for debugging connections. Use multilog filters (see qmail.org for examples, search for the phrase "Richard Lyons points out") to avoid having information overload.
